Banana pancakes with kefir
Flavorful, fluffy and very tasty banana fritters in kefir - a simple recipe that even a novice cook can handle. Adding bananas to the batter makes the usual kefir pancakes even more tender. Products (for 6 servings)
Wheat flour - 300 g (2 250 ml cups)
Kefir - 250 ml
Bananas - 2 pcs (300 gr)
Eggs - 2 pcs.
Sugar - 1,5 tbsp
Soda - 1 tsp.
Salt - 1 pinch
Vegetable oil (for frying) - 2 tablespoons (60 g
Prepare the ingredients.
Instead of kefir, you can use any fermented dairy products - drinkable yogurt, sour milk, ryazhenka, sour cream. Bananas are better to take ripe, sweet, can be with dark spots on the skin.
The dough is very fast, it is better to measure out the right amount of ingredients in advance.
Sieve the flour through a sieve into a deep bowl. Add salt and baking soda.
Rinse and peel bananas and fork them in a separate bowl.
Add sugar and eggs to the bowl with the bananas. Mix thoroughly until homogeneous.
Pour in the kefir and stir again until smooth.
Pour the kefir-banana mixture into the bowl with the flour.
Mix thoroughly until homogeneous with a whisk. The dough turns out rather thick and viscous, the whisk leaves grooves on the surface and pulls on it.
Heat vegetable oil in a frying pan. Pour about 1-2 tbsp. of batter into the pan, forming pancakes. Fry on medium heat (I have 5 of 9 divisions of electric stove) for about 1.5-2 minutes, until bubbles appear on the surface of the fritters.
Then use a spatula to flip the banana fritters to the other side and fry for about 1-2 minutes more, until browned.
Transfer the fried fritters to a plate lined with a paper towel to soak up the excess oil. Fry all the fritters this way.
This much dough will make a whole plate of fritters (20-25 fritters).
Sweet, very fluffy and incredibly tasty banana fritters with kefir are ready.
Serve puffy banana fritters to the table, topped with honey, sour cream, condensed milk, jam, or eat just like that, with tea or coffee.
