Spinach Banana Pancakes
The "right" breakfast can be beautiful and delicious! The banana and spinach pancakes are a great example of this. The healthy spinach is reliably disguised, but gives the pancakes a very colorful look. Meanwhile, the base of sweet mashed banana is responsible for the pleasant aroma, natural sweetness and excellent taste of the pancakes, while the whipped egg whites give them an airy and porous texture. Simple, easy, natural and delicious! Try it! Ingredients (for 2 servings)
Ripe banana - 170 g
Spinach - 100 g
Wheat flour - 60 g
Eggs - 2 units
Baking powder - 1/2 teaspoon
Vanilla - a tip of knif
Prepare the ingredients according to the list.
It is best to use a ripe or even overripe banana with dark spots - it will give the pancakes a sweet and bright flavor.
Crack the eggs and separate the egg yolks from the whites.
Place the egg whites in a separate container and whisk on high speed for about 3 to 5 minutes, until a lush, firm froth forms.
Rinse and dry the spinach. Peel the banana and cut into large chunks. Combine the spinach and banana in the bowl of the blender.
Blend on high speed for about 2 minutes until puree is smooth.
Place the spinach-banana mixture in a bowl. Add the egg yolks and vanilla. Mix well until smooth.
Add flour and baking powder in batches, stirring each time. Once again, mix thoroughly so there are no lumps of flour left.
Whisk the egg whites for about 20-30 seconds more, and then in portions of 1-2 tbsp. mix into the batter, stirring the mixture from the bottom up.
The dough should be thick and very fluffy.
Heat a dry non-stick skillet over medium (or just below medium) heat. Place about 2 tbsp of batter in the center of the pan, forming a round pancake, and fry for about 1.5-2 minutes on one side, until golden.
Then flip and fry the pancake for about another 1.5-2 minutes on the other side. Place the pancake on a plate and repeat the process with the remaining dough.
The airy spinach-banana pancakes are ready. Serve them to the table with your favorite sauce or sweet syrup to taste, if desired.
