For serving (as desired):

Sour cream - 100-150 g

Prepare the products.

You can use fresh spinach instead of frozen spinach, if you prefer. If you prefer frozen spinach, take it out of the freezer beforehand and thaw it completely.

Chop the defrosted spinach (together with the juices) with a blender until smooth and pureed.

Add the eggs and mix well.

Sift most of the flour (about 300 g) into the bowl with the spinach and egg mixture. Add salt and season with it.

Mix thoroughly. The dough should come out thick and smooth. If necessary, add 1-2 tbsp. more flour, until the desired consistency is obtained.

Heat a frying pan over medium heat and grease with a thin layer of vegetable oil. In portions, 1 tbsp. at a time, pour the batter into the pan, forming pancakes. Fry for about 3-4 minutes on each side.

Repeat the process with the remaining dough and fry all the fritters this way.

Spinach fritters are ready. Serve with sour cream or any other sauce of your choice, if desired.
