Sweet Courgette Fritters with Raisins

Ingredients (for 2 servings)

Zucchini - 1 piece (250 g)

Wheat flour - 75 gr

Sugar - 1 tbsp.

Raisins - 25 gr

Vegetable oil (for frying) - 1 tbsp

Prepare all the necessary ingredients.

Zucchini is best to take young and juicy.

Soak raisins in hot water for 5 minutes to soften them.

Wash the zucchini and remove the skin. Grate zucchini on a coarse grater and put it in a bowl.

Add the sugar.

Sift flour through a sieve and add it to a bowl.

Wash raisins, squeeze out excess liquid, finely chop and add to bowl.

Mix well. Zucchini pancake batter should be quite thick. If the mass will be dry, add a little water or milk.

Heat vegetable oil in a frying pan. Use a tablespoon to place the batter in the pan to form pancakes. Fry fritters on medium heat for about 3-4 minutes on each side, until brown.

Serve sweet zucchini fritters with raisins to the table, topping with sour cream if desired.
