Zucchini Fritters in Zucchini Rings
In the season of young vegetables, zucchini pancakes and fried zucchini rings are a hit on every table! I suggest combining the above two popular recipes and making zucchini fritters in zucchini rings. The dish turns out interesting, original and very tasty!
Ingredients (for 2 servings)
Zucchini - 1 piece (250 gr)
Wheat flour - 2,5-3 tablespoons
Egg - 1 egg
Salt - to taste
Ground black pepper - to taste
Vegetable oil (for frying) - 2-3 tbsp (30-45 ml
Prepare the necessary ingredients.
It is best to choose young zucchini - it is more tender compared to mature and it has no hard seeds.
Wash the zucchini, trim the edges. Cut the zucchini into thin circles.
Now make rings out of zucchini circles by taking out the middle with a shot glass, round mold or spoon.
Grate the taken out zucchini middles on a fine grater.
Squeeze the grated zucchini from the juice.
Add egg, flour, salt and ground black pepper to grated zucchini. You can also add chopped garlic, some dried herbs or your favorite spices if desired.
Mix it up. The mass should resemble pancake batter.
Pour oil into a frying pan and heat it up. Place zucchini rings in the pan.
Place zucchini batter in the middle of each ring.
Fry the zucchini fritters in the rings over medium heat for about 2-3 minutes on each side, until crispy.
Transfer the fried fritters first from the pan to a napkin to soak up the excess oil and then to a serving plate.
The zucchini fritters in zucchini rings are ready.
Serve zucchini fritters in zucchini rings hot, with sour cream or other sauce.
