Lazy belyashi with kefir (in a pan)

You can avoid some time-consuming processes by preparing a "lazy" version of belyashi - pancakes on kefir, stuffed with ground meat. Lazy belash turns out soft and airy, just the way we like it.

Products

For the meat stuffing:

Ground beef (pork and beef) - 200 gr

Onions - 100 gr

Salt - to taste

Ground pepper - to taste

For dough:

Flour - 300-315 g (2 cups of 250 ml)

Kefir (2.5% fat content) - 300 ml

Eggs - 2 pcs.

Soda - 2/3 teaspoon

Salt - 2/3 tsp.

Ground black pepper - to taste

Vegetable oil (for frying) - about 70 m

Prepare the necessary products.

We sift the flour.

Heat kefir (carefully, not overheating, so it does not curdle) to 35-40 degrees. Pour the kefir in a bowl, pour the baking soda and 2/3 tsp. salt.

Stir everything. Kefir interacts with the baking soda and immediately begins to foam.

We add the eggs and gradually pour the sifted flour, knead the dough.

The dough turns out a little thicker than for pancakes.

Put the dough aside while preparing the stuffing.

Pour salt and pepper into the filling.

Peel onions, cut them into small cubes and add them to the filling.

Mix until homogeneous.

Form the minced meat into balls weighing 25 grams each. In total, I got 12 balls.

Flatten minced meat balls to a thickness of 1 cm, so that they become flatbreads.

Heat vegetable oil in a frying pan, not too much, covering the bottom about 1 cm in height.

Using a tablespoon, place 1 tbsp. of dough in the pan and lightly spread it into the flatbreads, keeping the distance.

After that, reduce the heat.

On the flatbreads, immediately lay a blank of minced meat, slightly pressing it into the batter.

Again spoon the batter and pour the meat filling on top. Try not to let the new portion of batter spread beyond the base. Immediately cover the pan with a lid and fry belyashi on low heat until a nice golden crust - about 3-4 minutes.

We turn belyashis to the other side, cover the pan with the lid again and bring them to the readiness for about 5 more minutes on low heat. Fry all the belyashis, adding vegetable oil as necessary.

Ready lazy belyashi put on a paper towel to absorb excess fat.

We serve lazy belyashi on kefir warm, but they are also good cold.
