Pancake liver rolls with mushrooms and carrots in Korean

First we fry liver pancakes, and then form rolls with a filling of juicy and spicy carrots in Korean and mushrooms fried with onions. Mushrooms and onions go well with carrots, and the stuffing itself successfully sets off the taste of tender chicken liver pancakes.

Ingredients (for 6 servings)

Chicken liver - 400 g

Korean-style carrots - 250 g

Champignons - 200 g

Onions (medium sized) - 80 g

Eggs (not large) - 2 pcs.

Flour - 50 g (1/3 cup of 250 ml)

Salt - to taste

Ground black pepper - to taste

Vegetable oil - 60 ml (4 tbsp.

Prepare the products according to the list.

Wash the chicken liver, remove the veins and dry it. Place the liver in the bowl of a food blender with the blade attachment. Grind liver until smooth.

Place liver mass in a bowl. Beat eggs.

Add flour, salt (0.5 tsp.) and pepper (1 pinch).

Mix all the ingredients until homogeneous (the batter turns out quite fluid).

Heat a frying pan and grease it with oil (2 tablespoons). Pour a little batter into the pan and spread an even layer on the bottom. Fry liver pancakes for 1-1,5 minutes on each side.

Similarly, make pancakes from the remaining liver dough. I had a total of 6 pancakes.

Peel and dice onions.

Clean the mushrooms from damage and cut into small pieces.

In a second frying pan, heat vegetable oil (2 tablespoons) and fry the onion over medium heat for 3-4 minutes. Then add the mushrooms and fry everything for 10-12 minutes, until the mushrooms have browned. At the end of cooking, salt and pepper (by a pinch).

Ready mushrooms let cool a little.

Stuffing (Korean-style carrots and fried mushrooms with onions) visually divide into parts by the number of liver pancakes.

Place the liver pancake on a flat surface/plate. Spread the carrots on top, not quite reaching the opposite edge.

Place some of the mushrooms and onions on top of the carrots.

Roll up the liver pancake towards the free edge.

In the same way, form rolls of the remaining pancakes and stuffing. Send the rolls to the fridge for 1 hour (you can wrap them in clingfilm).

Pancake liver rolls with mushrooms and carrots in Korean way ready. When serving, it is better to slice the rolls portion by portion.
