Yeast pancakes with milk

Products (for 4 servings)

Milk - 375 ml

Water (warm) - 125 ml

Fresh yeast - 10 gr

Eggs - 2 units

Butter - 30 gr

Wheat flour - 150 gr (1 cup of 250 ml)

Sugar - 1 tbsp.

Salt - 1/2 tsp.

Vegetable oil (for frying) - 1-2 tbsp. spoon

Prepare the products according to the list.

Prepare the sourdough.

In a bowl combine 125 ml of warm water (temperature - about 30-40 degrees) and yeast. Mix until homogeneous.

Add 1 tsp. sugar and 1 tbsp. flour. Mix until homogeneous.

Place the starter in a warm place for 15-20 minutes to rise.

Break the eggs and separate into whites and yolks. Set egg whites aside for the moment. Place the yolks in a separate bowl, add the remaining sugar and beat until smooth. Add salt, leaving a pinch.

Melt the butter in any convenient way and then cool.

Pour the cooled butter into the bowl with the yolks.

Add the starter and mix thoroughly.

Pour in warm milk (about 30-40 degrees) and stir until smooth.

Knead the flour through a fine sieve and stir to make sure there are no lumps.

Cover with a towel and leave to rise in a warm place for 40 minutes.

Then stir in the risen yeast pancake batter. Cover again with a towel and place in a warm place for another 40 minutes.

Add a pinch of salt to the egg whites and beat at high speed with a mixer to a stiff froth. Add the whipped whites to the bowl of the proofed dough.

Stir gently from bottom to top. Cover again with a towel and let the dough stand for at least another 20 minutes, to rise.

Heat a frying pan on medium heat and grease with vegetable oil. Without stirring, scoop the batter from the bottom and pour into the pan. Fry the pancake for about 1-2 minutes on each side, until brown. Then remove the finished pancake to a plate and fry the rest of the pancakes in this manner.

Serve aromatic yeast pancakes with milk, topping them with sour cream, milk, honey or jam, if desired.
