Draniki stuffed with boiled eggs and fried onions
Ingredients (for 3 servings)
Potatoes - 600 gr
Wheat flour - 2 tablespoons
Soda - 1 pinch
Salt - to taste

For the stuffing:
Eggs - 3 pcs.
Onions - 2 pcs.
Green onions - 2-3 sprigs (15 g)
Fresh parsley - 2-3 sprigs (15g)
Salt - to taste
Ground black pepper - to taste

Vegetable oil for frying - 50 m
Prepare the ingredients according to the list.
Place the eggs in a saucepan, fill with water, add a pinch of salt, turn the heat up to high and bring to a boil. Then turn the heat down to medium and simmer the eggs for about 8 minutes.
Pour cold water over the hard-boiled eggs and leave to cool.
Peel the onions and cut them into small cubes.
Wash green onions and parsley, dry and finely chop them with a knife.
Heat about 1-2 tablespoons of vegetable oil in a frying pan over medium heat. Place chopped onions in the frying pan.
Stir-fry onions for about 3-4 minutes, until golden.
Remove boiled eggs from their shells, cut into small cubes and place in a bowl.
Add fried onions and chopped greens.
Add salt and pepper and mix.
Stuffing is ready.
Peel potatoes and grate them on a fine grater.
Add flour, baking soda and salt.
Stir the potatoes.
In a frying pan, heat the remaining vegetable oil. Spoon out the potato mixture, 2 to 3 tablespoons at a time, forming pancakes.
In the center of each potato pancake, place 1 tsp of the egg stuffing with the onions and herbs.
Cover the filling with about 1 tbsp of the potato mixture and press lightly with a spoon.
Fry the stuffed potato dumplings over low heat for about 3-4 minutes on each side, until crispy.
Nourishing potato pancakes filled with boiled eggs and fried onions are ready.
