Pancakes with bananas and rice

Although the filling for pancakes may seem strange at first glance, the combination of bananas with fried onions and rice is successful, the products perfectly complement each other. Thin pancakes on milk turn out tender, elastic and are perfect for serving with a filling.

Products (for 5 servings)

For the pancakes:

Milk - 650 ml

Eggs - 3 pcs.

Vegetable oil - 3 tbsp (+ 1 tsp. to grease the pan)

Wheat flour - 330g

Sugar - 2 tsp.

Salt - 1 pinch

Butter (to grease the pancakes, if desired)

For stuffing

Bananas - 400 gr

Rice - 100 gr

Onions - 1 pc.

Salt - to taste

Ground spices (turmeric, ginger, nutmeg, marjoram, garlic) - 1 pinch each

Vegetable oil - 1 tbsp

Prepare the products.

Wash the rice and pour 350 ml of water. Bring to a boil, salt and cook for 20 minutes over medium heat. Then strain the boiled rice in a colander.

In a bowl combine the eggs, salt and sugar.

Whisk with a whisk or mixer for 1 minute.

Pour in milk. Stir.

Sift in flour.

Add flour to the liquid mixture in batches, 2-3 tbsp. each, mixing constantly and breaking up lumps.

Add 3 tbsp. of vegetable oil. Once again, whisk the dough.

Heat a frying pan and grease it with vegetable oil. Pour about 2/3 of a ladleful into the pan, spread the batter all over the bottom. The diameter of my frying pan is 22 cm.

Fry the pancake on medium heat for 1 minute.

After a minute, use a spatula or knife to scoop up the edge of the pancake and flip it. Fry the other side for another 30 seconds.

If desired, brush each completed pancake with butter.

I had 19 pancakes.

Peel the onion and cut into small cubes.

In a pan, heat 1 tbsp of vegetable oil and fry the onion until it is lightly browned.

Peel bananas and cut into small cubes.

Put bananas in the pan with onions and fry for 1-2 minutes.

Add boiled rice, salt and spices. Heat everything together for another minute, stirring well.

Let stuffing cool down completely.

Stuff the pancakes.

Put 1 tbsp of stuffing on each pancake.

Fold up the edges of the pancake, covering the stuffing.

Fold the pancake with stuffing into an envelope.

Fold all the filled pancakes in the same way.

Heat vegetable oil in a frying pan and spread the pancakes. We brown them evenly on all sides.

Stuffed pancakes with bananas and rice are ready.
