Deruny baked with fried onions
Ingredients (for 3 servings)
Potatoes - 500 gr (400 gr peeled)
Onions - 150 gr
Egg - 1 egg
Flour - 40 gr
Fresh dill - 15 g
Vegetable oil - 45-60 ml (3 - 4 tbsp.)
Salt - to taste
Ground black pepper - to taste
Prepare all the necessary products.
Peel potatoes and grate them on a coarse grater. If the potatoes are juicy - squeeze out a little extra juice. It is not necessary to squeeze the juice very carefully, so that the deruny won't turn out dry. In any case, we should add flour, which will absorb excess moisture.
To grated potatoes, beat an egg, add salt and ground black pepper.
Finely chop the dill (leave a little for serving) and also add to the potatoes.
Mix until homogeneous.
Then add flour.
Mix again until homogeneous.
In a frying pan heat a small amount of vegetable oil (about 1 tbsp) and pour there about 1 tbsp of the potato mixture.
Fry the deruny on medium heat for about 2 minutes on each side, until golden. It is not necessary to boil until fully cooked.
When ready we put the deruny on a plate (you can put it on a paper towel to absorb excess oil).
In several batches, fry all the deruny, adding vegetable oil as necessary.
Peel the onion and cut it into quarter rings.
In a skillet, heat 1-2 tablespoons of vegetable oil and fry the onions for about 7-10 minutes, until golden.
Turn on the oven to preheat to 180 degrees.
Half of the fried derunks we transfer to a baking dish.
Put half of the fried onions on top.
Then put the rest of the deruny.
On top spread out the rest of the onions.
We send a form with deruny in a preheated to 180 degrees oven for 15-20 minutes.
Take out of the oven and sprinkle with remaining dill.
Serve the deruny hot. You can also serve sour cream with the deruny.
