Pumpkin curd pancakes

They are very tender, soft, sweet and, no less importantly, healthy. It takes about 25 minutes to make these "sunny" pancakes, so they are perfect for breakfast. When served with sour cream and honey, you can't tear yourself away from such a delicious treat).

Ingredients (for 3 servings)

Pumpkin - 220 g (peeled weight)

9 % cottage cheese - 200 g

Egg - 1 egg

Sour cream 15 % - 40 gr

Flour - 60 gr (1/2 cup of 200 ml)

Sugar - 40 gr

Baking powder - 1 tsp.

Cinnamon ground - 0,5 tsp.

Sunflower oil - 60 ml (4 tablespoons

Prepare the necessary ingredients.

Peel the pumpkin from the skin and the fibrous part with the seeds.

Grate the pumpkin flesh on a coarse grater directly into a bowl in which you will knead the pancake batter.

To the grated pumpkin add cottage cheese and sour cream.

Add the egg, sugar and ground cinnamon.

Mix the ingredients together.

Then add flour and baking powder.

Mix everything again.

Heat sunflower oil in a frying pan.

Using a tablespoon, pour pumpkin-cheese curd dough in the oil in the form of small flat flat cakes.

Fry pancakes on medium heat on both sides, 3-4 minutes on each side.

When the fritters are done, place them on a napkin to soak up the excess oil, and meanwhile fry the next batch.

The recipe calls for 10-12 pancakes (I had 11).

Pumpkin curd pancakes are ready.
