Pear Puff Pancakes

Beautiful thick pancakes with milk are a great alternative to the usual pancakes or pancakes for breakfast. The dough for pancakes with milk is tender, airy, and bakes well. The pancakes have a nice spongy texture and go great with juicy pear slices.

Ingredients (for 4 servings)

Pears - 2 pcs.

Milk - 170 ml

Eggs - 2 pcs.

Sugar - 4 tbsp.

Flour - 220 gr

Baking powder - 1,5 tsp.

Cinnamon ground - 1/2 tsp.

Vanilla sugar - to taste

Salt - 2 pinche

Prepare the products according to the list.

I made two puffy pancakes with pears from the above ingredients.

It is best to choose dense and ripe pears.

Prepare the batter for the pancakes.

In a deep container, break the eggs.

Pour the milk and add salt.

Whisk with a fork or whisk until smooth.

Mix the flour with the baking powder and immediately pour it into the egg and milk mixture.

Mix quickly - literally 9-10 times. The dough is thick, but kneads easily, no lumps form.

Sprinkle in the cinnamon.

Stir the dough one or two more times.

Wash and dry pears, cut in half and remove the core. Cut pears in half circles about 2-3 mm thick. Do not cut too thinly, so that the pears do not fall apart.

Grease a frying pan with vegetable oil and heat it well over medium heat. My frying pan is about 22 cm in diameter. It is best to choose a pan with a good non-stick coating.

Place the pear slices in the pan in a fan and cook for about 1 minute.

Sprinkle half of the sugar (2 tablespoons) over the pears. Reduce heat to low and cook for about 1 to 1.5 minutes, until sugar begins to "sizzle".

The pears have poached a bit and the sugar has melted, it's time to proceed to the next step.

Place half of the cooked batter evenly on top of the pears.

Cover with a lid and cook the pancake over low heat for about 7-10 minutes, until the batter has completely set.

Transfer cooked pancake and pears to a plate.

Similarly, prepare the second puffy pancake (this time, the slices of pears can be placed on the pan in a random order).

Puffed pancakes with pears on milk are ready.

Serve pancakes with pears to the table, if desired, garnished with mint leaves.
