Snack liver cake with cheese and walnuts
Ingredients (for 6 servings)
For liver pancakes:
Chicken liver - 400 g
Milk - 130 ml
Eggs - 2 pcs.
Flour - 90 gr (3 tablespoons)
Salt - to taste
Ground black pepper - to taste
Vegetable oil - 2 tablespoons

For stuffing:
Hard cheese - 150 gr
Walnuts (kernels) - 80 g
Garlic - 2 cloves
Mayonnaise - 170 g (10 tablespoons)
Fresh greens (parsley and dill) - 3 sprigs
Prepare the necessary ingredients.
Wash and peel the liver from the membranes.
Rinse parsley and dill under running water, dry.
Peel garlic.
In a bowl combine liver and milk, beat eggs.
Mix sifted flour, salt and ground black pepper.
Grind all ingredients with an immersion blender until homogeneous.
To the liver dough add vegetable oil (1 tbsp.) and mix thoroughly. The liver mass turns out liquid, but thanks to this consistency, liver pancakes will be very thin, plastic and tender.
Heat vegetable oil (1 tbsp.) in a non-stick frying pan. Pour a ladleful of liver batter into the center of the pan and spread evenly over the surface, rotating the pan. Fry the liver pancake first on one side for 2-3 minutes over medium heat.
Gently flip the liver pancake and fry another 2-3 minutes on the other side. Then transfer the pancake to a plate.
Fry all the pancakes this way. I had 10 pieces.
Grate cheese on a fine grater.
Chop walnuts with a rolling pin (leave a few large pieces of walnuts for decoration).
Pass garlic through a press in mayonnaise, mix thoroughly.
Assemble the cake: lay the liver pancake on a plate and smear some of the garlic mayonnaise (1/10th part).
Sprinkle grated cheese on top (1/9 part).
Add chopped walnuts (1/9 part).
Then one by one lay the pancakes on top of each other, and between them distribute the filling. Assemble the entire cake in this way.
Finely chop the fresh greens.
Cover the topmost pancake with mayonnaise, sprinkle with chopped greens and decorate with walnuts. Put in the fridge for 3-4 hours.
(It is necessary to let this dish to stand, after some time the pancakes will be soaked with mayonnaise and garlic).
The snack liver cake with cheese and walnuts is ready to serve.
