Young cabbage fritters with corn

Ingredients (for 3 servings)

White cabbage (young) - 120 g

Canned corn - 170 g

Carrots - 100 g (1 pc.)

Green onions - 60 g (6-7 pcs.)

Eggs - 3 pcs.

Vegetable oil - 30-45 ml (2-3 tbsp.)

Salt - 0,5 tsp.

Black pepper - pinc

Prepare all the ingredients. Drain the liquid from the canned corn (you can put the corn in a colander).

Slice the young cabbage into thin julienne strips or grate on a special chopper. Place in a bowl.

Rinse and peel carrots and grate on a coarse grater. Add to the cabbage.

Chop green onions finely and send them to the rest of the ingredients.

Add canned corn. Add canned corn and mix it all up.

Add eggs in a bowl. Salt and pepper it. Stir in the ingredients. Allow to stand for 8-10 minutes to allow vegetables to become soft and juicy.

Stir again before grilling as all the liquid sinks to the bottom.

Heat vegetable oil in a frying pan. Spoon the cabbage batter into the pan with a tablespoon, forming thin, small flatbreads. Cook under a lid on a low heat for 4-5 minutes on each side, until crispy.

Fry another batch in the same manner.

The young cabbage and corn fritters are ready.

You can serve the cabbage fritters with any sauce.
