Zucchini Fritters

These fritters are not sweet, so they can be served instead of bread with first courses. And if you complement the fritters with sour cream, they will become a great full breakfast or dinner.

Products

Young zucchini - 480 g

Kefir - 150 ml

Flour - 300 gr

Egg - 1 egg

Baking powder - 1 tsp.

Salt - to taste

Ground black pepper - to taste

Vegetable oil - 30 ml (2 tablespoons

Prepare all the necessary products.

Wash zucchini, trim edges on both sides. Cut zucchini into small pieces.

Put zucchini in a blender, add kefir.

Grind zucchini together with kefir until homogeneous.

Transfer zucchini mass to a bowl, beat an egg there.

Also add salt, pepper and baking powder.

We mix it.

In portions add flour and knead the dough. You may need a little less or more flour (depending on the juiciness of zucchini and the quality of the flour).

The dough is as thick as for ordinary pancakes.

Heat a frying pan with a small amount of vegetable oil. With a tablespoon pour the batter into the pan (about 1 tablespoon).

Fry the pancakes on medium heat for 1.5-2 minutes on each side, until browned. Fry all fritters in this manner, adding vegetable oil as needed.

Ready puffy zucchini fritters on a plate and serve.
