Zucchini fritters with kefir and greens

Recipe photo: Fried zucchini with greens Let's make ruddy zucchini fritters with kefir and greens. Tender, juicy and very hearty, these zucchini pancakes are delicious both warm and cold.

Ingredients (for 3 servings)

Zucchini - 300 gr

Egg - 1 egg

Kefir (fat content 1 %) - 100 ml

Flour - 80 g

Green onions - 10 g

Fresh dill - 10 g

Vegetable oil - 40 ml

Soda - 0,5 tsp.

Salt - 1 tsp.

Sugar - 1 tablespoon (without the hillock

Prepare all the ingredients.

Zucchini should be young, with tender skin and small seeds.

Any greens will do at your discretion.

Cut edges of zucchini on both sides. Grate zucchini on a medium grater. If zucchini are very juicy, squeeze the juice a little.

In a separate bowl beat the egg. Stir in salt and sugar with a whisk until smooth.

Pour egg mixture into grated zucchini. Stir to mix.

Pour in kefir of any fat content. Stir to mix.

Pour in the sifted flour, baking soda and stir until evenly distributed.

Sprinkle flour mixture into zucchini and stir to combine.

Finely chop the dill and green onions, add to the batter and mix. The batter comes out a little runny.

Heat vegetable oil in a frying pan. Spoon the batter into the pan.

Fry the fritters over medium heat for 3 to 4 minutes on each side until crispy.

Place the fritters on a paper towel to soak up any excess oil.

Buttermilk zucchini fritters with greens are ready.

You can serve fritters with sour cream or other sauces based on yogurt and sour cream.
