Draniki with bacon and cheese

Recipe photo: Draniki with lard and cheese A hearty breakfast or a snack from an unusual combination of ingredients - let's make delicious potato dumplings with cheese and lard, with the addition of dry yeast. Potato dumplings turn out very tasty: inside they are very soft and tender, and on the outside they are ruddy with a crispy crust. Thyme makes the dish more fragrant.

Ingredients (for 3 servings)

Potatoes (peeled) - 400 g

Pork fat (salted or smoked) - 60 g

Egg - 1 egg.

Parmesan cheese (or other hard cheese) - 50 g

Wheat flour - 40 g

Dry yeast - 1 g

Thyme - 2 sprigs

Vegetable oil - 50 ml

Salt - to taste

Ground black pepper - to taste

 

Prepare the necessary ingredients.

Potatoes are suitable for any kind.

You can take salted or smoked bacon. You can use already fried slices of lard - scraps.

Parmesan can be replaced with any good quality hard cheese.

Rinse and peel potatoes. Grate the potatoes on a coarse grater and put them in a bowl.

Beat an egg in a bowl with the potatoes and mix.

Grate the Parmesan on a medium grater. Add the cheese shavings to the rest of the ingredients, stir to combine.

Stir in the sifted flour.

Stir in the dry yeast.

Taste and season with salt and pepper, add thyme leaves and mix well.

Cut the lard into small cubes and add to the potato mixture. Stir and leave for 10-15 minutes.

Put a frying pan on medium heat. Pour in vegetable oil and heat well. With a tablespoon place portions of potato mass, giving a round shape. Fry on one side for 3 to 4 minutes over medium heat.

Then flip, continue frying in the same mode until crispy on the other side.

Transfer the fried potato darniki to a paper towel to absorb the excess oil.

Fry potato pancakes with the remaining dough in the same way.

The potato pancakes with lard are ready.

Serve immediately after cooking with sour cream, ketchup, mayonnaise or other suitable sauces.
