Fried zucchini and young cabbage

Ingredients (for 4 servings)

Zucchinis (young) - 500 gr (1.5 pcs.)

White cabbage (young) - 100 g

Eggs - 2 units.

Flour - 75 gr

Salt - 0,5 tsp. (to taste)

Ground black pepper - pinch

Vegetable oil - 30 ml (2 tablespoons

Prepare all the ingredients.

Trim the zucchini around the edges. If the vegetables are mature, remove the skin and seeds. Grate zucchini on a medium grater and transfer to a deep bowl. Juice squeeze no need.

Slice the young cabbage into thin julienne strips. Add to the zucchini.

Season the vegetables with salt and ground black pepper. Stir well.

Pour in the eggs to the vegetables. Stir until they are evenly distributed in the cabbage mixture.

Stir in sifted flour.

Stir to combine. You should get a dough of medium thickness.

Heat vegetable oil in a frying pan. Using a tablespoon, place portions of dough in a round shape. Fry on medium heat 3 to 4 minutes on each side until golden.

Place the fried pancakes on a paper towel to soak up the excess oil.

I made 15 pancakes with the listed amount of ingredients.

Zucchini and young cabbage pancakes are ready. They can be served with sour cream or other favorite sauce.
