The cottage cheese pancakes are very tender, soft and moderately sweet. They are delicious with sour cream, jam, or even without anything.

Products (for 3 servings)

Kefir (3,2 %) - 200 ml

Cottage cheese (5 %) - 200 gr

Egg - 1 egg

Flour - 130-150 gr

sugar - 15 g

8 gr of soda

Salt - 2,5 gr

Vegetable oil - 30 m

Prepare all the ingredients.

Kefir and cottage cheese use any fat content.

Sift flour.

Put cottage cheese in a bowl. Whisk in egg.

Mix with a spoon until homogeneous, so that there are no large lumps of cottage cheese. If desired, you can grind it with an immersion blender to make the mass more homogeneous.

Stir in the salt and sugar. Stir to combine. Adjust the amount of sugar to your taste.

Pour in kefir, straight from the fridge. Mix until homogeneous.

In several steps, pour in flour. Mix to make sure there are no lumps. Adjust amount of flour according to consistency. The dough should be thick and not spread when put in a pan.

Add baking soda to the batter.

Stir to combine.

Heat a frying pan with vegetable oil over medium heat. Then turn down the heat. Use a tablespoon to place portions of the batter in the pan to form pancakes. Cover the pan with a lid and fry the fritters over just below medium heat until crispy, about 3 to 4 minutes on each side.

Kefir and cottage cheese fritters are ready.

Serve fritters immediately after making - they taste best that way.
