Kefir Pancakes with spices and orange peel

Cinnamon, nutmeg, and ginger make up the spicy bouquet, but you can adjust the spices to your liking. These pancakes can even be served without toppings, because they are delicious on their own!  

 

Kefir 1% fat - 400 ml

Egg - 1 egg

Flour - 100 gr

Cane sugar or plain sugar - 35 g

Baking soda - 1/3 teaspoon

Orange (zest) - 1 pc (170 gr)

Cinnamon ground - 1/2 teaspoon

Ground ginger - 1/2 tsp.

Nutmeg ground - 1/2 tsp.

Vegetable oil - 3 tablespoons + to grease the pan

Salt - 1 pinch

 

Prepare the necessary ingredients.

Pour the kefir into a suitable bowl and warm it in the microwave until quite warm (about 1-1.5 minutes at 800 watts).

Pour a pinch of salt, baking soda, cane sugar (you can also use regular sugar) and dried ground spices: cinnamon, ginger and nutmeg into the heated kefir.

Mix with a whisk. Kefir will foam and increase in volume.

Wash and dry the orange, then peel it with a fine grater.

Add to the kefir mixture and stir.

Add egg to the kefir base. Again, mix well.

Then sift the flour into the dough base.

Knead out a smooth dough of the classic pancake consistency, without lumps. Pour 3 tablespoons of vegetable oil into the dough and mix again. Allow the batter to stand for 10 minutes.

After a while you can start frying pancakes.

Heat a frying pan and grease with vegetable oil.

Pour some of the batter into the center of the pan (I took a little more than half a ladle per pancake) and spread it across the bottom, rotating the pan in a circle.

Fry the pancake on high heat for about 20-30 seconds on each side.

Fry all the crepes this way. I made 10 pancakes 17-18 cm in diameter.

The fragrant, thin pancakes are ready!

Serve the pancakes boiling hot, topped with honey or other additives if you like.
