Oat pancakes filled with cottage cheese and greens

Products (for 4 servings)

For the pancakes:

Oat flakes - 100 gr

Egg - 1 egg

Water (as needed) - 80 ml (2-3 tablespoons)

Milk - 60 ml (4 tablespoons)

Lemon (for juice) - 1 slice (1 tsp. juice)

Soda - 1/2 tsp.

Salt - pinch

For the filling:

Cottage cheese - 200 g

Green onions - 2 quills (15 g)

Salt - as desire

Prepare the products according to the list.

I got 3 oatmeal pancakes with cottage cheese filling from the specified number of ingredients. My pan is 17 cm in diameter.

Lemon juice can be replaced with regular vinegar, as this ingredient is needed to extinguish baking soda.

Any greens can be used for the stuffing. I used green onions, dill or basil would also be delicious.

Put the flakes in the bowl of a blender or coffee grinder.

Grind the cereal on high speed in short bursts of 30 seconds.

If desired, the oat flakes can simply be finely chopped with a knife - but then the texture of the pancakes will not be as homogeneous.

Pour the shredded oat flakes into a deep bowl. Add the milk, egg and salt.

Melt the baking soda with about 1 tsp of juice - the baking soda will react with the juice and begin to foam. Pour the resulting frothy mass into the dough.

Thoroughly mix until homogeneous. The pancake batter should be quite liquid and flow down from the spoon in a thin stream. If the batter is too thick - adjust the consistency by adding water little by little.

Heat a dry frying pan without oil over medium heat. Pour about a half-cupful of batter into the pan and spread it across the bottom, gently tilting the pan sideways. Fry the pancake for about 1-2 minutes on each side.

Fry the rest of the pancakes in the same way.

Ready pancakes are quite elastic and porous.

Prepare the filling.

Cream cheese in a bowl. If the cottage cheese is grainy or lumpy, ruin it with a fork or beat it with an immersion blender.

Rinse and dry green onions, finely chop them with a knife and add them to the cottage cheese. Stir it up.

Place about 2-3 tbsp. of cottage cheese filling on the pancake.

Any way you like, wrap the filling in the oatmeal pancake (roll, envelope or triangle).

Fill the rest of the pancakes in the same way.
