Pancakes with milk, chocolate and watermelon

And if you wrap a small piece of watermelon pulp in a thin pancake, and when serving, pour melted chocolate and decorate with a leaf of fresh mint, you get an original dish, nourishing and pleasantly refreshing!

Ingredients (for 6 servings)

Watermelon - 300-400 gr

Flour - 200 gr (1,5 cup of 200 ml)

Milk - 500 ml

Sugar - 50 gr

Vegetable oil - 40 ml + for greasing pan

Chocolate - 80 g

Vanillin - a tip of knife

Salt - 0,25 teaspoon

Soda - 0,25 teaspoo

Prepare the necessary products.

Sift the flour beforehand.

In a large bowl combine flour, sugar, baking soda, salt and vanillin. Stir.

250 ml of milk gradually add to the bowl with the flour mixture, stirring constantly. You should get a thick, but as homogeneous mass as possible. Bring the remaining 250 ml of milk to a boil and also gradually add to the batter, stirring all the time.

Because the milk is added to the dry mixture, the pancake batter will be smooth and without lumps.

Allow the batter to stand for 15 minutes.

Then add vegetable oil to the batter and mix.

Heat a well coated frying pan and grease with a little vegetable oil. Pour a portion of the batter into the center of the pan and spread it all over the bottom in a circular motion. Fry the pancake on a fairly high heat for 30-40 seconds on each side.

Do the same with all the dough.

When ready, cool the pancakes. I had 12 pancakes. I used 6 of them, 6 more left over.

Cut watermelon flesh into small slices, removing all the seeds as much as possible.

Wrap each watermelon slice in a pancake.

Melt the chocolate in a water bath.

Pour the melted chocolate over the watermelon pancakes.

If you want the pancakes to have a more chocolatey flavor, you can double the amount of chocolate, pour it over the watermelon slices and then wrap the pancakes. I did not do so and sprinkled the pancakes with chocolate only on top.

Serve the pancakes with chocolate and watermelon to the table immediately after cooking.
