Pancake liver rolls with melted cheese and garlic

The pancakes are made with chicken liver, and for the filling we combine melted cheese with mayonnaise and garlic. Chicken liver goes well with cheese, the rolls are very tasty and nutritious.

Products (for 6 servings)

For the pancakes:

Chicken liver - 400 g

Onions (medium-sized) - 60 gr (1 pc)

Carrots (medium-sized) - 60 gr (1 pc)

Eggs - 2 pcs.

Milk - 120 ml

Flour - 3 tbsp.

Salt - 0,5 tsp.

Ground black pepper - 0,25 tsp.

Vegetable oil (for frying) - 45-60 ml (3-4 tbsp.)

For stuffing:

Cream cheese - 160 gr.

Mayonnaise - 2 tablespoons

Garlic - 2-3 cloves

Salt - pinch (to taste)

Ground black pepper - a pinch (to taste)

For serving (optional):

Korean-style carrots - 30 g

Mayonnaise - 1 tbsp.

Fresh parsley - a couple of sprig

Prepare all the products.

Chicken liver is washed, cleaned of veins and large vessels; cut into several pieces.

Peel the onion, cut into large chunks.

Chopped liver and onion put in the bowl of a kitchen blender with the attachment "knife", grind until smooth (you can also use a meat grinder).

Transfer the liver mass into a bowl and beat the eggs.

Pour milk into a bowl with liver. Stir everything.

Add flour, salt and pepper.

Mix with a whisk or mixer.

Grate peeled carrots on a fine grater and send to the liver mass. Stir everything again - the pancake batter is ready.

In a frying pan well heat vegetable oil (1-2 tbsp.). Pour some liver batter into the frying pan, forming a pancake. Fry pancake on each side for 1,5-2 minutes (depends on thickness of pancake). Make pancakes of remaining batter in the same way, adding oil if necessary.

For the filling grate melted cheese on a medium grater, put in a bowl. Add mayonnaise, peeled and pressed garlic, salt and pepper.

Mix everything until homogeneous.

Spread evenly each pancake with cheese stuffing.

And roll up into a roll.

Prepare all the rolls this way (I had 6 pieces). Leave in fridge to stand (about 1-2 hours).

After a while the liver rolls with cheese and garlic can be served.

These rolls are ideal for holiday and daily diet. When serving, it is better to cut them in portions. You can decorate them with carrots in Korean, mayonnaise or parsley.

You can serve the rolls by themselves or with a side dish, such as mashed potatoes.
