Pancakes with cheese and greens
Ingredients (for 2 servings)
Eggs - 2 pcs.
Flour - 90 gr (2/3 cup of 200 ml)
Sour cream - 180 gr
Salt - to taste
Ground black pepper - to taste
Cream cheese - 120 g
Chopped frozen greens - 1 tbsp.
Or fresh dill - 2-3 sprig
Prepare the products according to the list.
It is better to freeze the cheese in the freezer for about 20-30 minutes, so it will be easier to grate.
You can replace the processed cheese with salty cottage cheese, mozzarella or hard cheese.
Any greens can be used, I had chopped dill in the freezer.
In a bowl, combine the eggs and sour cream. Stir to combine.
Stir in the flour through a fine sieve. Add salt and ground black pepper.
Using a whisk, combine the ingredients into a smooth batter. It's similar to pancake batter in terms of thickness; it trickles down with a spatula in a thick stream.
Heat a dry frying pan. Divide the batter conventionally into four parts (into 2 pancakes) and spread the fourth part of the batter over the bottom of the hot pan. Fry the pancake on just below medium heat for about 2 to 3 minutes.
Use a spatula to pick up the edge of the pancake and flip it to the other side.
Rub half of the melted cheese on the pancake, garnish with dill greens.
Spread a quarter of the total amount of batter over the cheese and dill so that the batter covers everything with a thin layer. Fry on this side for another 3-4 minutes under a lid.
Using a spatula, flip the pancake to the other side and fry for another 3 minutes.
Remove the finished pancake with filling onto a plate.
So cook one more pancake.
Pancakes with melted cheese and greens are ready. It is better to serve them to the table immediately, while they are hot: melted cheese when cut appetizingly stretches, and pancakes - soft and airy.
