Pumpkin pancakes with milk

Recipe photo: Pumpkin pancakes with milk These amazing pancakes owe their bright, sunny color to pumpkin, because pumpkin puree is the base of the pancake batter in this recipe. The pancakes turn out thin, tender and soft. Cinnamon and vanilla add just the right touch to the pumpkin flavor of the pancakes.

Ingredients (for 4 servings)

Pumpkin - 400 gr (pureed)

Milk - 250 ml

Flour - 120 gr (1 cup of 200 ml)

Sugar - 3 tablespoons

Cinnamon ground - 0,5 tsp.

Eggs - 3 pcs.

Salt - 1 pinch

Vanillin - 2 pinches

Baking powder - 1 tsp.

Vegetable oil - 3 tablespoons of batter + 2 tablespoons for fryin

Prepare the necessary ingredients.

Peel the pumpkin from the skin and the inner fibrous part with the seeds. Cut the pumpkin flesh into small cubes.

Put the pumpkin into a saucepan with 100 ml of water and add 1 tbsp. sugar and the ground cinnamon. Then place it on the stove.

Cook the pumpkin at a gentle simmer until soft, about 15 minutes.

Then mashed potato the pumpkin and the remaining liquid with a potato masher or an immersion blender. The more homogeneous the pumpkin puree, the better!

Pour cold milk into the pumpkin puree and stir.

In a separate bowl break the eggs, add 2 tbsp. sugar, vanilla and salt. Whisk together with a whisk.

Pour pumpkin-milk mixture into egg mixture. Stir with a whisk.

Pour sifted flour into pumpkin base with baking powder.

Knead into a smooth dough.

Pour the vegetable oil into the resulting pumpkin batter.

Once again mix the dough and leave for 10 minutes.

After 10 minutes you can start frying pancakes. Heat a frying pan and grease it with vegetable oil. I oiled only the first time, and you look at your pan.

Pour an incomplete ladle of batter into the center of the pan and spread it around the bottom in a circular motion.

Fry the pancake over medium-high heat for about 30-40 seconds on each side.

Fry all the crepes this way. I had 14 crepes with a diameter of 18 cm.

The pumpkin pancakes are ready. You can use them for stuffing, for example, with cottage cheese.

Serve pumpkin pancakes with butter, sour cream, honey, condensed milk - in general, with whatever you like. It will be delicious in any case. :)
