Zucchini "chebureks" with minced beef

With pre-fried minced meat, it looks a little dry to me. I also tried adding both stuffing and cheese. Still, I liked the recipe I'm sharing here best. It turns out very tasty and juicy. And it's quick and easy to make - just the way you like it!

Products

For the dough:

Zucchini (young) - 600 g (2 pcs.)

Milk - 50 ml

Egg - 1 egg.

Flour - about 100 g (2/3 cup of 250 ml)

Green onions (green part) - a small bunch

Salt - 1 tsp.

For stuffing:

Beef (meat or minced meat) - 250 g

Water - 50 g (if necessary)

Green onions (remaining white part) - a small bunch

Salt - to taste

Ground black pepper - to tast

Grate the zucchini on a coarse grater (I use an electric slicer).

We transfer the zucchini to a colander, add a teaspoon of salt, stir and leave for 10-15 minutes, while we do the stuffing.

I always make the stuffing myself - 250 grams of beef cut into pieces and pass through the meat grinder.

Finely chop the white part of the green onion and add it to the stuffing. For juiciness add a little water. If the forcemeat is purchased, you do not need to add water, everything has already been added to it. Stuffing salt and pepper to taste. Stir.

Zucchini squeeze. The more juice you can squeeze out, the less flour you add.

We add an egg and finely chopped green onions. I also add more salt, since almost all the salt goes with the juice - I add about 1/3 teaspoon of salt.

Add the milk. Now it's turn of flour - we need 100-120 gr, it can be little more or little less - the consistency of dough (as on the photo).

Pour 1/5 of the dough onto a warmed up griddle (if you have a non-stick griddle, it doesn't need to be greased with oil, if in doubt, grease it a thin layer). Spread a few tablespoons of dough, flatten the dough into a round, thin pancake.

When the dough has set a little, spread 1/5 of the stuffing on one side of the dough.

Cover with the free part of the dough, trying to make the edges stick together, flatten and fry on medium heat for 3-4 minutes on each side, until the stuffing is completely cooked inside.
