Cabbage pancakes with semolina

Manna grits and an egg will make the cabbage "dough" viscous, so that the pancakes will hold their shape, and fried onions will give them a more expressive flavor.

Ingredients (for 3 servings)

White cabbage - 350 g

Onions - 100 gr (1 pc)

Egg - 1 egg

Semolina - 30 gr

Garlic - 1 clove

Fresh parsley - 5 g (2-3 twigs)

Sunflower oil - 75 ml (5 tablespoons)

Salt - 1/3 tsp.

Ground black pepper - 1-2 pinche

Prepare the necessary ingredients.

Cut the white cabbage into thin strips. You can do this with a regular knife or use a special grater.

Boil 700 ml of water in any convenient way.

Put the shredded cabbage into a pan and pour boiling water over it. Put the pot on the stove on high heat, and when the water boils, reduce the heat to minimum and boil the cabbage under a lid for about 8-10 minutes, until soft.

Discard the boiled cabbage in a colander and leave it to drain and let the water cool.

While the cabbage is cooling, peel and dice the onion into small cubes.

In a frying pan, heat the sunflower oil (2 tablespoons) and fry the onion in it over high heat for 2 minutes, stirring frequently.

Rinse parsley and chop its leaves.

Peel the garlic.

Squeeze the cooled cabbage thoroughly from the remaining liquid and transfer it to a deep bowl.

In a bowl with the cabbage, put the fried onion, beat the egg, pour the semolina, salt and black pepper, add the parsley and garlic, skipped through a press.

Knead the cabbage mass thoroughly and leave for 10 minutes (for the semolina to swell).

After 10 minutes in a frying pan heat sunflower oil (45 ml) and with a tablespoon pour into it cabbage "dough" in the form of flat flat cakes.

Fry the fritters on medium-high heat for about 2 minutes on each side.

Fry all the fritters this way. I got 9 of them.

The semolina fritters are ready.

Serve fritters hot or warm as an appetizer with a simple sauce or as an addition to a main dish.
