Thick yeast pancakes with milk

Milk - 650 ml

Wheat flour - 550 gr

Eggs - 2 units

Butter - 50 g

Sugar - 60-80 grams (or to taste)

Fresh yeast - 20 gr

Salt - 1/3 spoonful

Vegetable oil (for frying) - 50-70 ml

Prepare the products according to the list.

Heat milk until warm (about 35 degrees).

Prepare the sourdough.

Pour about 200 ml of warm milk into a bowl, add 2 tablespoons of sugar. Thoroughly stir it so that sugar dissolves.

Then add the yeast (previously crumbling it).

Then add 3-4 tablespoons of flour.

Then mix thoroughly with a whisk.

We cover the bowl with cling film and put the stew for 15-20 minutes in a warm place to rise. When the leavened bread increases in volume and begins to bubble - it is ready.

Melt the butter in a convenient way (in the microwave or in a water bath), cool it slightly and add it to the stew. We also add the eggs, the remaining sugar, salt and the remaining milk.

Mix with a whisk or mixer on low speed.

In portions, mixing each time, add the remaining flour and knead the dough. You can knead the dough with your hand, a spoon or a mixer on low speed.

The consistency of the dough should resemble low-fat sour cream or thick kefir.

Cover the dough with cling film or a lid and leave in a warm place to rise for 30-40 minutes. The dough should increase in volume about 2 times.

Grease a frying pan with vegetable oil and heat over medium heat. Pour about 1-2 ladles of batter into the frying pan and spread it out in a layer about 1 cm thick.

Cover and fry the pancake for about 1-2 minutes on each side.

We cook the rest of the pancakes in the same way, don't forget to grease the pan with vegetable oil every time.

Thick yeast pancakes with milk are ready. We put them on a plate and serve, if desired, topped with sour cream, honey or jam.
