Tomato fritters
Products
Tomatoes - 5 tomatoes (550 g)
Wheat flour - 140 g (about 1 cup of 200 ml)
Egg - 1 egg
Fresh parsley - 10 sprigs
Fresh basil - 4 sprigs
Baking powder - 1 teaspoon
Salt - to taste
Ground black pepper - to taste
Vegetable oil (for frying) - 2-3 tbsp
Prepare the products according to the list.
If desired, you can choose the greens to your taste, for example, replace the basil with dill or parsley.
Rinse parsley and basil, remove large stems. Finely chop the leaves with a knife.
Wash the tomatoes, cut them in half and remove the stalks. Grate the tomatoes on a grater in a deep bowl. Discard the skin.
Add chopped greens, egg, salt and pepper to the tomatoes. Mix them.
Mix flour with baking powder and add it in batches, mixing each time to the bowl with tomatoes and greens. Thoroughly knead the dough until homogeneous.
Heat about 1 tbsp of vegetable oil in a frying pan over medium heat. Spoon the batter into the pan about 1 to 2 tbsp. at a time, forming small pancakes. Fry tomato fritters over medium heat for about 2-3 minutes on each side, until brown.
Fry the rest of the fritters in the same way, adding vegetable oil to the pan if necessary.

Tomatoes are very fond of basil, it is even recommended to grow them in the same bed. If desired, garnish such tomato fritters with basil and serve.
