Watermelon Pancakes
Ingredients (for 8 servings)
Watermelon (flesh) - 150 gr
Ryazhenka - 100 ml
Wheat flour - 90 gr (3 spoons with a slide)
Egg - 1 egg
Sugar - 1 tsp.
Baking powder - 1/3 tsp
Prepare the products according to the list.
If desired, instead of sugar you can use any other sweetener of your choice.
In a bowl combine the ryazhenka, egg, sugar and baking powder. Whisk with a whisk or fork until smooth.
In portions, each time stirring, add flour through a fine sieve.
Thoroughly mix.
Remove seeds from watermelon flesh. Cut pulp into arbitrary pieces, put in the bowl of a blender and beat until smooth.
Pour the watermelon mixture into the dough. Thoroughly mix. The pancake batter should be homogeneous, fairly liquid, and flow down a thin stream from a spoon or whisk. Leave the batter for about 3 minutes.
Heat a well heated frying pan over medium heat. I have a tested frying pan, to which nothing sticks. If you are not sure about your pan - you can grease it with vegetable or butter.
Pour about 2 tablespoons of batter into the pan, forming small pancakes. Fry for about 1 minute, until bubbles appear on the surface of the pancakes.
Flip the pancakes and cook for 1 minute as well.
Bake the rest of the pancakes in the same way.
The flavorful watermelon pancakes with ryazhenka are ready.
