Zucchini fritters with ham and cheese

Recipe photo: Courgette fritters with ham and cheese This time we make zucchini pancakes without flour. To make the pancakes hold their shape well, we use semolina. And for a richer flavor and aroma we add ham and cheese. Tender vegetable pancakes with flecks of smoked meat cubes and melted cheese are a new favorite among breakfasts.  

Ingredients (for 2 servings)

Zucchini - 260 g

Ham - 170 g

Suluguni/Mozarella cheese - 90 gr

Semolina - 55 gr (4 tablespoons)

Egg - 1 egg

Vegetable oil (for frying) - 16 g (3 tbsp.)

Sour cream - 1 tablespoon

Salt - 3 g (to taste)

Ground black pepper - 1 pinch (to taste

Prepare the products.

Cut off the edges of the zucchini. Grate zucchini on a coarse grater and put in a separate container.

Crack an egg into the zucchini, add sour cream.

Cut the ham into small cubes.

Grate the cheese on a coarse grater.

We put the ham and cheese in the zucchini mass.

Pour semolina, salt and pepper.

Mix until homogeneous. Leave for 10-15 minutes at room temperature. During this time, the semolina will swell, absorbing all the juices.

Heat a frying pan with vegetable oil and with a tablespoon put there zucchini mixture, slightly flattening it and making it somewhat flat. Fry the fritters on just below medium heat for 4-5 minutes on one side.

Flip the fritters to the other side and fry for another 3-4 minutes. When flipping, use two small spatulas, as the melted cheese makes the fritters very tender.

We put ready fritters on a plate and serve them with sour cream/mayonnaise and fresh herbs, if you want.
