Peel the zucchini from the skin and seeds (if using an old one) and grate it. Season with salt and leave for 15-20 minutes.
After this time squeeze the zucchini juice thoroughly and drain.
Pour in milk and beat eggs.
Finely chop the herbs and add to the zucchini as well. Stir well.
Add flour and mix thoroughly.
It will be a thick dough, like on pancakes.
Peel and mince garlic, then pound it.
In a separate bowl, grate 2 kinds of cheese, add garlic and mix.
Heat a frying pan and grease with vegetable oil. Pour some of the batter into the center of the pan, spreading it over the bottom.
Fry for 2 to 3 minutes over medium heat, then flip.
Spread some of the cheese filling on half of the pancake.
Using a spatula, cover the filling with the other half of the pancake.
Fry on each side for 2-3 minutes.
Remove "cheburek" onto a plate.
Do the same with all the dough and stuffing.
My pan is 20 cm in diameter, and the result is 4 pancakes.
Serve zucchini chebureks with cheese warm, garnished with fresh chopped dill if you want.
It is very delicious served with sour cream or other favorite sauce.
