Curd Fritters with Raisins

The fritters turn out tender, soft and fragrant, the taste is pleasant with cottage cheese, and the raisins burst with juicy sweetness when you bite into them. A breakfast with these pancakes will turn into a festive tea party!  

Ingredients (for 3 servings)

Cottage cheese (9 % fat content) - 100 gr

Flour - 150 gr (1 cup of 250 ml)

Egg - 1 egg.

Milk - 180 ml

Raisins - 60 g

Sugar - 25 g

Baking powder - 5 g

Butter - 15 gr

Vegetable oil - 50 ml

Salt - 1 pinch

 

Prepare the necessary ingredients.

Melt the butter in a water bath or in the microwave and cool slightly.

Put the cottage cheese in a bowl and with a spoon crush it, breaking up large lumps.

beat the egg, add the sugar and a pinch of salt. Also add melted butter.

Stir well.

Pour room temperature milk into the curd mass and stir again.

Then add the flour mixed with the baking powder.

Knead to a smooth dough.

Pour raisins in boiling water for 1 minute. Then drain the water and dry them with a paper towel.

Fold the raisins into the curd batter.

Stir to combine.

Heat a frying pan with vegetable oil and place 2 tbsp of the curd dough in it, forming round tortillas about 8-9cm. in diameter.

Cover the pan with a lid and fry the fritters on a low heat for 2 minutes on each side.

Fry all the fritters this way. I made 11.

The cottage cheese fritters with raisins are ready!

Serve fritters warm and topped with sour cream, condensed milk or honey.
