It is better to take soft or pasty cottage cheese for pancakes, which can be easily kneaded.

Add eggs, sugar, salt to the cottage cheese and mix well.

Pour in warm kefir, stir.

In portions add sifted flour, knead a thick dough. Do not add too much flour, otherwise the pancakes will be clogged, but not too little, so that the pancakes will not spill out on a pan.

Add baking soda, mix well.

Pour in vegetable oil (1 tbsp.), and stir.

Leave the dough at room temperature for 10 minutes, to undergo a reaction of baking soda and kefir.

Ready dough in any case do not stir, so as not to destroy the airiness.

Gently place the dough with a spoon on a hot frying pan with vegetable oil. Fry the fritters until golden brown.

Turn out the ready cottage cheese fritters in kefir, put them on paper towels to absorb excess fat.

The cottage cheese fritters are ready. Serve with sour cream, honey or jam
