Pancake Kutya with poppy seeds, raisins and nuts

An unusual kutya of pancakes with poppy seeds, raisins, and nuts is a great way to please guests at the Christmas table with a treat with a new flavor! Such an original dessert will be gone in minutes.

Products (for 8 servings)

Poppy seed - 100 gr

Raisins - 60 g

Walnuts - 60 g

Honey - 80 g

Orange peel - 10g

For the pancakes:

Milk - 300 ml

Water - 150 ml

Eggs - 2 pcs.

Flour - 160 gr (1 250 ml cup)

Vegetable oil - 30 ml

Salt - 1/4 tsp

Prepare the products according to the list.

Milk for the pancakes is suitable for any fat content.

Take any dried fruit and nuts you like.

Start by preparing the pancakes.

In a deep bowl beat the eggs, add salt and whisk until smooth. A mixer or food processor is great for making pancake batter, but you can get by with a regular whisk.

Pour in the milk and water. Stir.

Stir in the flour through a fine sieve. Stir thoroughly to break up any lumps in the flour.

Pour 20 ml of unscented vegetable oil into the dough. Stir to mix.

Heat a frying pan over medium heat. Pour a ladleful of batter into the center and spread quickly across the bottom of the pan. Fry the pancake for about 1 minute on each side, until golden.

Do the same with all the dough.

Once the pancakes are ready cool a little.

Transfer the poppy seeds to a fine strainer and rinse under running water. Put the poppy seeds in a saucepan, pour water on it and put it on the fire. Bring the water to a boil and simmer for 25-30 minutes. Remove the saucepan from the fire and leave the poppy seeds to cool together with the liquid.

Rinse raisins under running water, put them in a bowl and pour boiling water over them. Allow to stand for 10-15 minutes.

Heat a dry frying pan.

Chop the walnuts in small pieces, put them in a pan and toast over a low heat, stirring, for 5-7 minutes.

Raisins in a sieve so that the excess liquid can drain off. Then pat dry with a paper towel.

Toss the poppy seeds on a strainer and leave for 15-20 minutes to let all the liquid run out.

Grind the poppy seeds with an immersion blender until a smooth pulp.

Add dried nuts, raisins, orange zest and honey to the chopped poppy seeds. Stir to combine. If the honey is thick, warm it in a water bath.

Roll up the pancakes and cut into 5 mm wide strips. Place the sliced pancakes in a deep bowl.

Add the poppy seed dressing. Stir to mix.

Pancake kutya with poppy seeds, raisins and nuts is ready. You can serve at once.
