Pancakes with canned peaches and lemon zest
Products
Flour - 200 g (1.5 cups of 200 ml)
Milk - 150 ml
Eggs - 3 pcs.
Tinned peaches - 1 400g jar
Sugar - 100 gr
Lemon (zest) - 1 pc.
Vanillailla - 1 pinch
Vegetable oil - 4-5 tbsp (for frying)
Sugar powder (for serving) - to tast
Prepare all the necessary ingredients.
Thoroughly wash and dry the lemon. Remove the zest from the lemon with a fine grater.
Toss the peaches in a colander and let the syrup drain. Cut peaches into slices.
Break eggs into a bowl. In the same place we pour in sugar and milk. Whisk with a whisk until smooth.
Add flour, vanilla and baking powder. Stir in the flour mixture.
Add peaches and lemon zest.
Stir with a spoon.
Heat a frying pan with vegetable oil. Spoon batter onto pan in islands, forming pancakes. Fry the fritters on a low heat for 3 to 4 minutes. When bubbles begin to appear on the surface turn them over.
Fry pancakes on another side for 2 minutes.
Make sure the pancakes don't burn; if necessary lower the heat.
Thus fry fritters of all dough.
From this amount of ingredients I got 20 pieces.
We sprinkle the pancakes with powdered sugar and serve them with sour cream if you want.
