Potato pancakes with canned fish

Products

Canned fish (sardine, mackerel, saury) - 240 g (130 g without liquid)

Potatoes - 400 g (peeled - 300 g)

Onions - 120 g

Egg - 1 egg

Flour - 30 g (1 tablespoon with a spoonful)

Fresh dill - 2-3 sprigs (12 gr)

Salt - to taste

Ground black pepper - to taste

Vegetable oil (for frying) - 6-7 tbsp (90-105 ml

Prepare the products according to the list. I got 9 medium-sized potato dumplings from the indicated amount.

Almost any kind of canned fish will do - sardine, saury or mackerel in oil or in its own juice.

Immediately drain the liquid from the canned fish.

Pour the fish into a bowl and mash it with a fork.

Peel onion, wash and cut into small cubes.

Peel potatoes, wash, grate them on a coarse grater and send them to a bowl.

Add fish and onion.

Dill is washed, dried, finely chopped with a knife and sent to the bowl.

Add flour, egg, ground pepper and salt.

Then stir it up.

Heat 3-4 tbsp of vegetable oil in a frying pan (so that it completely covers the bottom). Pour the potato mixture into the frying pan, about 2 tbsp. spoonfuls, forming small potato flapjacks.

Fry the pancakes over medium heat for about 1-2 minutes on each side, until crispy.

Prepare the rest of the pancakes in the same way, adding vegetable oil if necessary. If you want, you can put the fried pancakes for a while on a paper towel to absorb the excess oil.

Potato dumplings with canned fish are ready.
