Zucchini fritters with feta and mint

Recipe photo: Butternut squash fritters with feta and mint Zucchini fritters with feta and mint are incredibly tender and fragrant. Feta cheese adds a light creaminess and sourness to the fritters, garlic and green onions add spice, and mint adds an unusual flavor and bright aroma.

Ingredients (for 2 servings)

Zucchini - 250 g

Feta cheese - 100 gr

Green onions - 10 g

Fresh dill - 15 g

Fresh mint - 5 g

Garlic - 5 g

Egg - 1 egg

Flour - 30 gr

Vegetable oil - 30 m

Prepare all the ingredients. It is better to use young zucchini with tender skin.

Rinse and dry zucchini. Trim edges on both sides. Grate zucchini on a coarse grater. If zucchini are very juicy squeeze out the excess liquid.

Beat in the egg. Stir to mix.

Add the feta. Knead with a spoon until smooth.

Wash and dry green onions, dill and mint leaves. Finely chop them. Add to the zucchinis.

Peel garlic, grate on a fine grater and add to zucchini. Pepper to taste and season with salt if needed, as the cheese is quite salty. Stir to combine.

Stir in the flour. Stir to combine.

It should come out as a thick mass.

Heat a pan with vegetable oil and spoon out portions of zucchini batter, forming pancakes. Fry the fritters over medium heat for 2 to 3 minutes on each side, until golden brown.

Place the fritters on a paper towel to remove any remaining oil.

Zucchini fritters with feta and mint are ready.

They can be served warm or cold, with sour cream or other appropriate sauce.
