Sollenberries with apples

Recipe photo: Apple puff pastry Sologeniki is a Ukrainian sweet dish of thin pancakes with a filling, baked under a layer of whipped whites. In this recipe, we use apples stewed with cinnamon as a filling, but jam or marmalade will also work. The recipe for stewed apples is as simple as the set of products for it, and the result will surpass all expectations.

Products (for 6 servings)

For the pancakes:

Milk - 230 ml

Egg yolks - 3 pcs.

Butter - 30 gr

Wheat flour - 100 gr

Sugar - 30 gr

Salt - pinch

For stuffing:

Apples - 500 gr

Sugar - 50 gr

Butter - 50 gr

Vanilla sugar - 1 tsp.

Cinnamon powder - 0,5 tsp.

For the meringue:

Egg whites - 3 pcs.

Sugar - 50 g

First, prepare the ingredients for the pancake batter.

Separate the whites from the yolks. The yolks are needed for the batter, and the whites are used to make the meringue. Put the container with the egg whites in the refrigerator - when cold, they whip better into a thick foam.

Combine the egg yolks with the sugar. Mix with a whisk until sugar has dissolved.

Add to the egg yolks half of the milk and sifted wheat flour (100 g - about 2/3 of a cup of 250 ml.). Use a whisk to knead a homogeneous dough.

Melt the butter and add to the dough. Add remaining flour and mix until homogeneous.

The batter should drip off the ladle in a thin stream.

Heat a frying pan and pour a ladleful of batter onto the hot surface. Rotate the pan to spread the batter all over the bottom. Fry the pancake over medium heat for 1 to 2 minutes. Then flip and cook for 30 seconds more.

Do the same with all the dough.

You will end up with 10 thin pancakes. Fold the pancakes one on one so that they remain soft.

For the filling, prepare sweet and sour apples, sugar, cinnamon and butter.

Peel and peel the apples and cut them into small cubes.

Melt the butter in a frying pan and add the apples. Fry for 2 to 3 minutes, until apples are soft.

Add the vanilla sugar, sugar and cinnamon to the pan.

Turn the pan to maximum heat and heat the apples for 2 minutes so the sugar dissolves completely and coats the apple cubes with a light caramel.

Turn on the oven to preheat to 180 degrees.

Place 2 tablespoons of the apple filling on the middle of the pancake.

Roll up the pancake into a tight roll.

Roll up the rest of the pancakes in the same way.

Butter a baking dish and arrange the apple pancakes in a single row.

For the meringue, take the egg whites out of the fridge, beat them in the blender cup with a wire whisk until stiff and gradually add 50g of sugar.

Transfer the meringue to the pancake tin, spreading evenly over the entire surface with a spatula.

Place the form in a preheated to 180 degrees oven.

Bake the pancakes with apples for 15 minutes.

The perfect dessert for a large family is ready.
